Get up close and personal with Rosa Mitchell, as she teaches you how to cook seasonal Italian dishes from the heart. Enjoy a Saturday morning around a kitchen bench with Rosa as she runs through some of her favourite ingredients and techniques of the season.

SATURDAY 1ST JULY
Winter is all about warm, hearty dishes so in the first class, Rosa will focus on slow braising meats. Learn about the produce, the techniques and Rosa’s tips for perfecting braising this winter.

Slow braised meats are perfect for family dinners and entertaining. The meat melts in your mouth with all the flavour of the specially picked ingredients you have added. And the options for sides are endless. Listen up for some of Rosa’s favourites!

Tasting plates will be passed around throughout the morning, so you will be able to try everything that Rosa demonstrates. Watch, touch and, most importantly, sample all of Rosa’s delicious dishes.

Wines of Italy will be available for purchase on the day.

Take Rosa’s fact sheets and recipes home with you so you can recreate all the dishes again. You’ll also have something scrumptious from the day so your family can taste what you have discovered.

TICKET CONDITIONS
All tickets are refundable up to 14 days prior to the event. If less than 14 days notice is given prior to the event date, tickets cannot be refunded, but can be moved to the next event. Dietary requirements are required 14 days prior to the event date, we will attempt to cater for all requirements. The event will be confirmed 14 days prior to the date, if the event is cancelled a full refund will be made.

To celebrate Easter this year Rosa will be serving Chocolate Rabbit from the 10th of April up to Easter.

This is the only time of the year Rosa’s famous Italian style chocolate rabbit so be sure not to miss out.

Sourcing locally farmed rabbits they will be slowly braised and then covered in Rosa’s special chocolate sauce.

In the easter mood we will also be serving up a range of Easter Italian sweets transporting you to the full Italian Easter experience.

Merchant is hosting a fundraising dinner by four great Italian chefs to help those affected by the recent earthquake in Amatrice. Rosa Mitchell (Rosa's Canteen), Guy Grossi (Grossi Florentino), Massimo Mele (Catering by Massimo), Johnny Di Francesco (400 Gradi) will be presenting four courses including antipasto, pasta, main and dessert.

What could be a better than a dinner cooked by both Rosa Mitchell and Alfredo La Spina (of Bar Idda)? Together they will celebrate the ancient foods of Sicily. Each chef will present four dishes with influences from the bygone era of this historic Mediterranean island. The menu will feature rabbit, cassata and more delicious examples of Sicily’s important culinary history.

This is the final event of Giro d'Italia where Rosa has shown off Italy’s illustrious and varied regions through the plate and the glass.

On Saturday the 8th of October, Rosa’s Canteen will explore the Puglia region with four courses of family-style sharing plates. Puglia, a region in southern Italy, is known for its sunny weather, whitewashed hill towns, centuries-old farmland and hundreds of miles of Mediterranean coastline.  Discover hidden stories and Italian flavours dotted across this famous region.
