COOKBOOK DINNER SERIES - ROSA'S FARM

Continuing our Cookbook dinner series, we are celebrating ‘Rosa’s Farm’.

Italian-born Melbourne chef Rosa Mitchell and her husband Colin bought their farm at Yandoit in Central Victoria in the late 1980s. They acquired 20 acres of cleared land running up a volcanic hill, a few fruit trees and a dilapidated milking shed. The farm, which has expanded over the years, has always been a special haven for Rosa and her family, a place for good food and wine and celebratory meals. In this book she shares recipes for her favourite Italian dishes which are simple, traditional, lovingly prepared and utterly authentic.

During this special event, Rosa will be cooking a selection of recipes from this book for you to enjoy.

Fill your home with the beautiful aromas of Italy this June, and head along to our ultimate Winter-inspired cooking class. Join Rosa Mitchell as she demonstrates some of her most loved, hearty and comfort food styled dishes assured to warm you from the inside out.
This class will have both meat and vegetable based dishes, featuring a variety of delicious soups, slow cooks, and meals you can leave bubbling and braising away.

As usual, at the conclusion of the demonstration, Rosa will serve up a feast of some of the dishes she showed. Watch, learn and, most importantly, sample all of Rosa’s delicious dishes!

Take Rosa’s fact sheets and recipes home with you so you can recreate all the dishes again. You’ll also have a goodie bag specially made by Rosa for you.

To kick off our new Cookbook dinner series, we are starting with celebrating 10 years of “My Cousin Rosa”. The first of Rosa’s cookbooks “My Cousin Rosa” follows the journey from Sicily to Australia- a surprisingly small step in kitchen miles. The tablecloth and stockpot are the same, cardoons and fennel still grow wild on the roadside and the extended family and neighbours gather to make salami in the barn once a year. My Cousin Rosa captures the atmosphere, experiences and recipes of Rosa’s kitchen. The dishes are soulful, traditional, family-orientated and utterly authentic.

It is Rosa’s turn to cook from the book for this very special Birthday celebration. Held on the day before Mother’s Day it is the perfect gift for Mum.

Our Melbourne lives are so closely intertwined with Port Phillip Bay and yet most of our community are unaware of the bounty it can provide.

Chefs Ashley Davis, Sascha Rust (Copper Pot Seddon), Slowfood Melbourne and our very own Rosa Mitchell partner to explore our most local environment.

A cocktail style event held within sardine fisherman Phil McAdams' boat shed, will hero the seafood available from our bay. Sardines caught by Phil, as well as urchin, whiting, mussels and wakame – dependant of course on the catch of that week.  
 
Using the boatshed's wood fire, the food will highlight respect for our most local ingredients.

To celebrate Easter this year Rosa will be serving Chocolate Rabbit from the 10th of April up to Easter.

This is the only time of the year Rosa’s famous Italian style chocolate rabbit so be sure not to miss out.

Sourcing locally farmed rabbits they will be slowly braised and then covered in Rosa’s special chocolate sauce.

In the easter mood we will also be serving up a range of Easter Italian sweets transporting you to the full Italian Easter experience.

On Saturday the 8th of October, Rosa’s Canteen will explore the Puglia region with four courses of family-style sharing plates. Puglia, a region in southern Italy, is known for its sunny weather, whitewashed hill towns, centuries-old farmland and hundreds of miles of Mediterranean coastline.  Discover hidden stories and Italian flavours dotted across this famous region.
